Top your skewers with those extra green onions you set aside. Plate 'em up and get some sour cream on the side. Dig in while they're still hot.

Toss your baking sheet back into the oven. Cook for about 5 to 7 minutes till the cheese is all bubbly and oozy.

Put the skewers onto a tray lined with parchment. Cover the tater tots with the cheddar, then bacon, then half your chopped onions.

Once out of the oven, let the tater tots chill out a bit so you don’t burn your hands. Slide 4 to 6 tater tots onto each skewer.

Set your oven to 218°C (425°F). Lay the tater tots across a baking sheet in a single row. Bake for about 28 minutes, making sure to turn them over at the halfway mark.
