Heat it up to 325°F or 160°C so it’s ready to bake.

Spritz or brush oil on your muffin pan, silicone or metal, so nothing sticks.

Take a bowl and whisk eggs, cottage cheese, salt, pepper, and garlic powder until smooth.

Gently stir in shredded cheese and chopped veggies until it’s all mixed well.

Spoon the mix into each muffin cup, filling them about 75% full.

Put them in the oven and bake for 20 to 25 minutes till the edges firm up and tops get a little puffy.

Take out and leave them in the pan to cool for 5 minutes.

Carefully pop the egg bites out, serve warm or keep in the fridge for later.
