Cheesy Veggie Egg Bites (Printable Version)

# What You'll Need:

→ Egg Blend

01 - 6 big eggs
02 - Half a cup of low-fat cottage cheese
03 - A pinch of salt about 1/4 teaspoon
04 - About 1/4 teaspoon black pepper
05 - 1/4 teaspoon garlic powder if you like

→ Extras

06 - Half a cup of shredded cheddar or mozzarella
07 - Half a cup chopped veggies like spinach, peppers, or mushrooms

→ Getting Ready

08 - Spray or brush some oil for greasing

# Steps to Follow:

01 - Heat it up to 325°F or 160°C so it’s ready to bake.
02 - Spritz or brush oil on your muffin pan, silicone or metal, so nothing sticks.
03 - Take a bowl and whisk eggs, cottage cheese, salt, pepper, and garlic powder until smooth.
04 - Gently stir in shredded cheese and chopped veggies until it’s all mixed well.
05 - Spoon the mix into each muffin cup, filling them about 75% full.
06 - Put them in the oven and bake for 20 to 25 minutes till the edges firm up and tops get a little puffy.
07 - Take out and leave them in the pan to cool for 5 minutes.
08 - Carefully pop the egg bites out, serve warm or keep in the fridge for later.

01 - Using a silicone muffin pan makes popping them out and cleaning way easier.
