When both sides are crispy and golden, take the sandwiches off the pan. Cut each in half with a serrated knife. Enjoy while they're still warm.

Gently turn the sandwiches over and toss in a little more butter if you want. Press down a bit and let the other side brown up too.

Warm a cast iron pan over medium-low heat and rub in some butter. Put the filled sandwiches in. Cover the pan and wait for the bottoms to get crispy and golden.

Set down your bread slices. Make a layer with a slice of cheese, spread some avocado mix on, put another slice of cheese over that, and top with another slice of bread. You'll have a cheesy stack.

Chop open the avocados, pull out the pits, and scoop the insides. Throw the pulp into a food processor with fresh coriander, chopped chilli, lime juice, and a dash of salt. Blend until smooth and creamy.
