Avocado Cheese Toastie (Printable Version)

# What You'll Need:

→ Main Ingredients

01 - Salt for seasoning, use as much as you like
02 - Butter for toasting, use however much you want
03 - Juice from half a lime
04 - 1 green chilli, chopped up
05 - About 1/4 cup chopped fresh coriander
06 - 10 slices cheese
07 - 10 slices of your favorite sandwich bread
08 - 2 soft avocados, ripe and ready

# Steps to Follow:

01 - When both sides are crispy and golden, take the sandwiches off the pan. Cut each in half with a serrated knife. Enjoy while they're still warm.
02 - Gently turn the sandwiches over and toss in a little more butter if you want. Press down a bit and let the other side brown up too.
03 - Warm a cast iron pan over medium-low heat and rub in some butter. Put the filled sandwiches in. Cover the pan and wait for the bottoms to get crispy and golden.
04 - Set down your bread slices. Make a layer with a slice of cheese, spread some avocado mix on, put another slice of cheese over that, and top with another slice of bread. You'll have a cheesy stack.
05 - Chop open the avocados, pull out the pits, and scoop the insides. Throw the pulp into a food processor with fresh coriander, chopped chilli, lime juice, and a dash of salt. Blend until smooth and creamy.

01 - If you like extra crunch, toast up rustic bread—they stay crisp even after cooling.
02 - Fancy cheese gives richer flavor, but regular cheese slices totally work too.
